Equipment

  • 1 Skillet For cooking the filling
  • 1 Deep fryer or large pot For frying the egg rolls

Ingredients
  

  • 6 Egg roll wrappers
  • 1/2 lb Sausage Removed from casing
  • 1 cup Bell peppers Diced
  • 6 Eggs Beaten
  • 1/2 cup Shredded cheese Optional
  • to taste Salt and pepper

Instructions
 

  • In a skillet, cook the sausage over medium heat until browned, breaking it apart with a spoon.
  • Add the diced bell peppers to the skillet and cook until softened.
  • Pour in the beaten eggs, stirring continually, until the eggs are fully cooked. Season with salt and pepper.
  • Remove from heat and let the mixture cool slightly.
  • Lay out the egg roll wrappers, placing a spoonful of the sausage and egg mixture onto each wrapper.
  • Sprinkle shredded cheese over the mixture if using.
  • Fold in the sides of the wrapper and roll tightly to enclose the filling.
  • Deep fry the egg rolls in hot oil until golden brown and crispy.
  • Drain on paper towels and serve hot.

Notes

Egg rolls can be customized with various ingredients such as mushrooms, onions, or different types of cheese.
