  • 1 Toaster For toasting the bread
  • 1 Frying pan For cooking the eggs

Ingredients
  

  • 4 slices Whole grain bread Toasted
  • 1 Ripe avocado Sliced
  • 2 Eggs Fried or scrambled
  • 2 slices Tomato
  • 2 leaves Lettuce Washed and dried
  • to taste Mayonnaise Optional
  • to taste Salt and pepper

Instructions
 

  • Cook the eggs according to your preference (fried or scrambled), seasoning with salt and pepper.
  • Spread mayonnaise on one side of all the toasted bread slices, if using.
  • On one slice of bread, layer lettuce, tomato slices, fried/scrambled eggs, and avocado slices.
  • Top with the second slice of bread, mayonnaise side down, to form the sandwich.
  • Cut the sandwich in half and serve immediately.

Notes

For a healthier version, you can substitute mayonnaise with a spread of your choice, like hummus or Greek yogurt.
