Equipment

  • 1 Grill pan For grilling the chicken
  • 1 Saucepan For boiling the eggs

Ingredients
  

  • 4 cups Romaine lettuce Washed and torn into pieces
  • 1 cup Croutons
  • 1/2 cup Parmesan cheese Shaved
  • 4 Soft-boiled eggs Peeled and halved
  • 2 pcs Chicken breasts Boneless and skinless
  • 1 tbsp Olive oil
  • 1 tsp Garlic powder
  • to taste Salt and pepper
  • 1 clove Garlic Minced
  • 2 tbsp Lemon juice Freshly squeezed
  • 1 tsp Dijon mustard
  • 1/2 cup Olive oil Extra virgin
  • to taste Salt and pepper

Instructions
 

  • Marinate the chicken breasts with olive oil, garlic powder, salt, and pepper.
  • Heat a grill pan over medium heat and cook the chicken for 6-7 minutes on each side.
  • Rest for 5 minutes before slicing.
  • In a bowl, whisk together anchovy paste, minced garlic, lemon juice, Dijon mustard, and slowly drizzle in olive oil while whisking until emulsified.
  • Season with salt and pepper to taste.
  • In a large bowl, combine romaine lettuce, croutons, and shaved Parmesan cheese.
  • Add the desired amount of dressing and toss until well coated.
  • Top the salad with sliced grilled chicken and soft-boiled eggs.
  • Serve immediately.

Notes

For a lighter version, you can omit the croutons or replace the chicken with tofu.
