Equipment

  • 1 Non-stick skillet For cooking the eggs and bacon
  • 1 Mixing Bowl For preparing the chipotle mayo

Ingredients
  

  • 4 Large eggs Beaten
  • 8 slices Turkey breast
  • 8 strips Bacon Cooked until crispy
  • 4 Large tortillas
  • 2 cups Baby spinach Fresh
  • 1/2 cup Mayonnaise
  • 2 tbsp Chipotle peppers in adobo sauce Finely chopped
  • 1 tbsp Lime juice Freshly squeezed

Instructions
 

  • In a mixing bowl, combine mayonnaise, chipotle peppers, and lime juice. Mix well and set aside.
  • Heat a non-stick skillet over medium heat. Pour in the beaten eggs, stirring occasionally, until fully cooked. Set aside.
  • Spread a generous amount of chipotle mayo over each tortilla.
  • Layer each tortilla with baby spinach, cooked eggs, turkey slices, and crispy bacon.
  • Tightly roll up each tortilla. If desired, the wrap can be lightly toasted in the skillet for a warm finish.
  • Cut the wraps in half and serve immediately.

Notes

For a lighter version, substitute turkey bacon and use whole wheat tortillas. The chipotle mayo can also be made with a low-fat mayonnaise.
