Follow this recipe to prepare delicious Chilaquiles with Eggs, a traditional Mexican breakfast dish consisting of lightly fried tortillas simmered in salsa, and topped with fried eggs.

Equipment

  • 1 Non-stick skillet For frying eggs and simmering chilaquiles

Ingredients
  

  • 4 cups Tortilla chips
  • 2 cups Salsa verde or roja Store-bought or homemade
  • 1/2 cup Chicken broth Optional, for a saucier texture
  • 1 cup Shredded cheese Such as queso fresco or cheddar
  • 1/4 cup Cilantro Chopped
  • 1/4 cup Sour cream
  • 4 Eggs
  • to taste Salt and pepper
  • 2 tbsp Oil For frying

Instructions
 

  • In a large skillet over medium heat, warm the salsa (and chicken broth if using) until hot.
  • Carefully fold in the tortilla chips until they are evenly coated with the salsa. Cook for a few minutes until the chips start to soften.
  • Sprinkle shredded cheese over the chilaquiles and cover with a lid, letting the cheese melt for 3-4 minutes.
  • Remove from heat and prepare to top with eggs.
  • In a separate non-stick skillet, heat oil over medium heat.
  • Crack eggs into the skillet, being careful to keep the yolks intact. Season with salt and pepper.
  • Cook until the whites are firm but the yolks are still runny, or to your desired level of doneness.
  • Place the cooked chilaquiles on plates, top each with a fried egg.
  • Garnish with cilantro and dollops of sour cream.
  • Serve immediately and enjoy.

Notes

For a lighter version, you can bake the tortilla chips instead of frying them. Adjust the salsa quantity to taste, depending on how dry or saucy you prefer your chilaquiles.
