Korean Japchae (Stir-fried Glass Noodles) Recipe

Equipment

  • 1 Large Pot For boiling noodles
  • 1 Frying pan or wok For stir-frying

Ingredients
  

  • 250 g Sweet potato glass noodles
  • 1 cup Spinach Blanched
  • 1 medium Carrot Julienned
  • 1 medium Onion Sliced
  • 5 pieces Shiitake mushrooms Soaked and sliced
  • 2 tbsp Soy sauce
  • 1 tbsp Sesame oil
  • 1 tbsp Sugar
  • 2 cloves Garlic Minced
  • to taste Salt
  • 1 tbsp Sesame seeds Toasted

Instructions
 

  • Cook the sweet potato glass noodles in boiling water according to package instructions, then drain and rinse under cold water.
  • Stir-fry each vegetable separately in a pan with a little oil, starting with onions, then carrots, and mushrooms, seasoning each with a pinch of salt. Set aside.
  • Blanch the spinach, squeeze out excess water, then season with a little soy sauce and sesame oil.
  • In a large mixing bowl, combine the noodles with soy sauce, sesame oil, sugar, and minced garlic.
  • Add the stir-fried vegetables and blanched spinach to the noodles.
  • Toss everything together until well mixed. Adjust seasoning with soy sauce, sugar, and salt as needed.
  • Garnish with toasted sesame seeds before serving.

Notes

For added protein, consider including slices of beef or tofu. You can also adjust the vegetables based on what's available or preferred.
