  • 1 Deep fryer For frying the potatoes
  • 1 Saucepan For preparing the gravy
  • 1 Pot For poaching eggs

Ingredients
  

  • 4 Large potatoes Cut into fries
  • as needed Oil For frying
  • 2 tbsp Butter
  • 2 tbsp All-purpose flour
  • 1.5 cups Beef or vegetable broth
  • to taste Salt and pepper
  • 1 cup Cheese curds
  • 4 Eggs For poaching

Instructions
 

  • Deep fry the cut potatoes in oil until golden and crispy. Drain on paper towels.
  • In a saucepan, melt butter over medium heat, stir in flour to make a roux. Gradually whisk in broth, cook until thickened. Season with salt and pepper.
  • Poach eggs in gently simmering water until whites are set but yolks remain runny.
  • Place a layer of fries on a plate, sprinkle cheese curds on top, then ladle hot gravy over. Top each serving with a poached egg.

Notes

For a vegetarian version, use vegetable broth for the gravy and consider adding sautéed mushrooms for added flavor.
