Equipment

  • 1 Skillet For frying the eggs
  • 1 Saucepan For making the gravy
  • 1 Deep fryer or heavy pan For frying the potatoes

Ingredients
  

  • 4 large Potatoes cut into fries
  • 200 g Cheese curds
  • 4 Eggs for frying
  • 2 tbsp Butter
  • 2 tbsp All-purpose flour
  • 1.5 cups Beef or chicken stock as preferred
  • to taste Salt and pepper

Instructions
 

  • Deep fry the potato fries until golden and crispy. Drain on paper towels.
  • In a saucepan, melt the butter over medium heat and whisk in the flour until smooth.
  • Gradually add the stock, stirring continuously until the gravy thickens. Season with salt and pepper to taste.
  • Place a layer of crispy fries in a serving dish.
  • Sprinkle cheese curds over the fries.
  • Pour hot gravy over the fries and cheese curds to melt them.
  • Fry eggs to your liking and place on top of the poutine.
  • Serve immediately.

Notes

For a vegetarian version of the gravy, use vegetable stock instead of beef or chicken stock. To make it healthier, consider baking the fries instead of frying.
