Equipment

  • 1 Oven-safe skillet or baking dish For baking the beans and eggs together

Ingredients
  

  • 4 cups Navy beans Cooked or canned
  • 1 cup Maple syrup
  • 1/2 cup Ketchup
  • 1 medium Onion Finely chopped
  • 2 tbsp Mustard
  • 3 tbsp Apple cider vinegar
  • to taste Salt and pepper
  • 4 Eggs
  • as needed Parsley For garnish

Instructions
 

  • Preheat oven to 350°F (175°C).
  • In a skillet, mix together the beans, maple syrup, ketchup, onion, mustard, and apple cider vinegar. Season with salt and pepper to taste.
  • Bring to a simmer and cook for 10 minutes, stirring occasionally.
  • Make four wells in the bean mixture and crack an egg into each well.
  • Place the skillet in the oven and bake until the eggs are set, about 20-25 minutes.
  • Garnish with parsley before serving.

Notes

If desired, bacon or sausage pieces can be added to the beans for an extra layer of flavor.
