Equipment

  • 1 Springform pan 9-inch preferred
  • 1 Mixer Stand or hand mixer for blending

Ingredients
  

  • 1 1/2 cups Graham cracker crumbs
  • 1/3 cup Unsalted butter Melted
  • 1/4 cup Sugar
  • 4 x 8-ounce Cream cheese Room temperature
  • 1 1/4 cups Sugar
  • 1 tsp Vanilla extract
  • 4 Eggs Room temperature
  • 1 cup Sour cream Room temperature

Instructions
 

  • Preheat your oven to 325°F (160°C).
  • Mix graham cracker crumbs, melted butter, and sugar together, then press the mixture into the bottom of the springform pan.
  • Bake the crust for 10 minutes, then remove from oven and let it cool.
  • Increase oven temperature to 350°F (175°C).
  • In a large bowl, blend the cream cheese and sugar until smooth.
  • Mix in vanilla extract, then add eggs one at a time, fully incorporating each before adding the next.
  • Gently fold in the sour cream.
  • Pour the filling over the crust in the springform pan.
  • Bake for 50 minutes, or until the center is just set.
  • Turn off the oven and leave the door closed; let the cheesecake sit in the oven for an hour.
  • Remove from oven, cool completely, then refrigerate for at least 4 hours or overnight.

Notes

For best results, ensure all ingredients are at room temperature before starting. The cheesecake can be topped with fruit, whipped cream, or served plain.
