Ingredients
  

  • 4 large eggs
  • 4 strips of bacon
  • 4 large flour tortillas
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced tomatoes
  • 1/4 cup diced red onions
  • 1/4 cup diced bell peppers (any color)
  • Salt and pepper to taste
  • Optional toppings: salsa, avocado, sour cream, chopped cilantro

Instructions
 

  • Cook the bacon: In a large skillet over medium heat, cook the bacon until crispy. Once cooked, transfer the bacon to a paper towel-lined plate to drain excess grease. Set aside.
  • Prepare the scrambled eggs: In a bowl, whisk the eggs until well beaten. Season with salt and pepper according to your taste preferences. Heat the same skillet over medium-low heat and add the beaten eggs. Gently scramble the eggs until they are fully cooked and fluffy. Remove from heat and set aside.
  • Assemble the breakfast burritos: Lay out the warm tortillas on a clean surface. Divide the scrambled eggs among the tortillas, spreading them out in a line along the center. Crumble the cooked bacon and sprinkle it over the eggs. Add the shredded cheddar cheese, diced tomatoes, red onions, and bell peppers on top.
  • Roll the burritos: To roll the burritos, fold the sides of each tortilla inward, then fold the bottom edge up over the filling. Roll tightly from the bottom to the top, ensuring the filling is securely wrapped inside the tortilla. Repeat with the remaining tortillas and filling.
  • Cook the burritos: Heat a skillet or griddle over medium heat. Place the wrapped burritos seam side down onto the hot surface. Cook for 2-3 minutes per side, or until the tortillas are golden brown and crispy.
  • Serve and enjoy: Once cooked, remove the burritos from the skillet and let them cool for a minute. Slice each burrito in half diagonally and serve warm. You can garnish with additional toppings such as salsa, avocado, sour cream, or chopped cilantro, if desired.
