Ingredients
  

  • 4 corn tortillas
  • 4 large eggs
  • 2 tbsp vegetable oil, divided
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 jalapeño, seeded and minced (optional)
  • 1 (14.5 oz) can diced tomatoes, with juice
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt and pepper, to taste
  • 1 cup refried beans, warmed
  • 1 avocado, sliced
  • 1/2 cup crumbled Cotija or feta cheese
  • Chopped fresh cilantro, for garnish

Instructions
 

  • In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the onion and cook until softened, about 3-4 minutes. Add the garlic and jalapeño (if using) and cook for an additional 1-2 minutes.
  • Stir in the diced tomatoes with their juice, cumin, chili powder, salt, and pepper. Bring the mixture to a simmer and cook for about 10 minutes, until slightly thickened. Remove from heat and keep warm.
  • In a separate skillet, heat the remaining 1 tablespoon of vegetable oil over medium heat. Fry the corn tortillas, one at a time, for about 15-20 seconds per side, until slightly crispy. Transfer to a paper towel-lined plate to drain.
  • In the same skillet, fry the eggs to your desired level of doneness (over-easy, over-medium, or over-hard).
  • To assemble the Huevos Rancheros, spread a spoonful of refried beans onto each tortilla. Top with a fried egg and a generous amount of the tomato sauce. Garnish with avocado slices, crumbled cheese, and fresh cilantro.
