- 4 large eggs
- 2 cup baby spinach, roughly chopped
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced onion
- 1/4 cup diced bell pepper
- 2 large whole wheat tortillas
- 1 tbsp olive oil
- Salt and pepper, to taste
In a medium bowl, whisk the eggs with a pinch of salt and pepper. Set aside.
Heat a non-stick skillet over medium heat and add 1/2 tablespoon of olive oil. Add the onion and bell pepper, cooking until softened, about 3-4 minutes.
Add the chopped spinach to the skillet and cook until wilted, about 1-2 minutes.
Pour the whisked eggs into the skillet and gently scramble them, combining them with the cooked vegetables. Cook until the eggs are just set, about 2-3 minutes. Remove the egg mixture from the skillet and set aside.
Wipe the skillet clean and add the remaining 1/2 tablespoon of olive oil. Place one tortilla in the skillet and sprinkle half of the shredded cheese on one side of the tortilla.
Spread half of the egg mixture on top of the cheese, then fold the other half of the tortilla over the filling. Cook for 2-3 minutes per side, or until the tortilla is golden brown and the cheese is melted.
Repeat with the remaining tortilla, cheese, and egg mixture.
Cut each quesadilla into wedges and serve immediately with your favorite salsa or hot sauce.
