Egg and Spinach Breakfast Quesadilla - A Healthy and Delicious Morning Meal

Ingredients
  

  • 4 large eggs
  • 2 cup baby spinach, roughly chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced onion
  • 1/4 cup diced bell pepper
  • 2 large whole wheat tortillas
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions
 

  • In a medium bowl, whisk the eggs with a pinch of salt and pepper. Set aside.
  • Heat a non-stick skillet over medium heat and add 1/2 tablespoon of olive oil. Add the onion and bell pepper, cooking until softened, about 3-4 minutes.
  • Add the chopped spinach to the skillet and cook until wilted, about 1-2 minutes.
  • Pour the whisked eggs into the skillet and gently scramble them, combining them with the cooked vegetables. Cook until the eggs are just set, about 2-3 minutes. Remove the egg mixture from the skillet and set aside.
  • Wipe the skillet clean and add the remaining 1/2 tablespoon of olive oil. Place one tortilla in the skillet and sprinkle half of the shredded cheese on one side of the tortilla.
  • Spread half of the egg mixture on top of the cheese, then fold the other half of the tortilla over the filling. Cook for 2-3 minutes per side, or until the tortilla is golden brown and the cheese is melted.
  • Repeat with the remaining tortilla, cheese, and egg mixture.
  • Cut each quesadilla into wedges and serve immediately with your favorite salsa or hot sauce.
