Ingredients
  

  • 4 cup mixed salad greens
  • 2 cup cooked chicken breast, diced
  • 4 hard-boiled eggs, chopped
  • 6 slices crispy bacon, crumbled
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled blue cheese
  • 1/2 cup sliced red onion
  • 1/2 cup sliced cucumber
  • Salt and pepper to taste

For the Dressing

  • 1/4 cup extra-virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 clove garlic, minced
  • 1 tsp honey
  • Salt and pepper to taste

Instructions
 

  • In a large salad bowl, arrange the mixed salad greens as the base. Begin layering the ingredients on top of the greens. Start with the cooked chicken breast, followed by the hard-boiled eggs, crispy bacon, diced avocado, cherry tomatoes, crumbled blue cheese, sliced red onion, and sliced cucumber.
  • Season the salad with salt and pepper to taste.
  • In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, Dijon mustard, minced garlic, honey, salt, and pepper to create the dressing.
  • Drizzle the dressing over the salad, or you can serve it on the side.
  • Toss the salad gently to ensure all the ingredients are well-coated with the dressing.
