Equipment

  • 1 Baking sheet For baking the croissants
  • 1 Mixing Bowl For preparing the almond cream

Ingredients
  

  • 100 g Butter Softened
  • 100 g Powdered sugar
  • 100 g Almond flour
  • 2 Eggs
  • 1 tsp Vanilla extract
  • 4 Croissants Day-old, cut in half
  • 50 g Sliced almonds
  • 10 g Powdered sugar For dusting

Instructions
 

  • In a mixing bowl, cream together the butter and powdered sugar until smooth.
  • Add almond flour, eggs, and vanilla extract, and mix until well combined.
  • Preheat the oven to 180°C (350°F).
  • Spread a generous amount of almond cream inside each halved croissant.
  • Sandwich them back together and place on a baking sheet.
  • Spread a layer of almond cream on top of each croissant and sprinkle with sliced almonds.
  • Bake for 15-20 minutes until golden brown and crispy.
  • Remove from the oven and dust with powdered sugar before serving.

Notes

For a more intense almond flavor, add a few drops of almond extract to the cream.
