Equipment

  • 1 Medium pot For boiling eggs
  • 1 Salad bowl For mixing the salad

Ingredients
  

  • 2 Eggs Hard-boiled and sliced
  • 1 Avocado Peeled, pitted, and sliced
  • 4 cups Mixed salad greens
  • 1 cup Cherry tomatoes Halved
  • 1/4 cup Red onion Sliced thin
  • to taste Salt and pepper
  • 3 tbsp Olive oil
  • 1 tbsp Lemon juice Freshly squeezed
  • 1 tsp Dijon mustard
  • 1 clove Garlic Minced

Instructions
 

  • Boil the eggs in a pot of water for 9-10 minutes. Cool, peel, and slice them.
  • In a salad bowl, combine the salad greens, cherry tomatoes, red onion, and avocado slices.
  • Arrange the egg slices over the salad.
  • In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, and minced garlic.
  • Season the dressing with salt and pepper to taste.
  • Drizzle the dressing over the salad and toss gently to combine.
  • Serve immediately, garnished with extra herbs if desired.

Notes

For added protein, top the salad with grilled chicken or chickpeas.
