Equipment

  • 1 Non-stick skillet For cooking bacon and eggs
  • 1 Spatula For scrambling eggs

Ingredients
  

  • 4 slices Bacon Cooked until crispy
  • 4 large Eggs Lightly beaten
  • 2 tbsp Butter
  • 1 cup Guacamole Fresh or store-bought
  • 2 large Tortillas Flour or whole wheat
  • to taste Salt and pepper

Instructions
 

  • Cook bacon in a non-stick skillet until crispy. Set aside on a paper towel-lined plate.
  • In the same skillet, melt butter over medium heat.
  • Add beaten eggs, season with salt and pepper, and gently scramble until just set.
  • Spread guacamole evenly over each tortilla.
  • Layer scrambled eggs and crispy bacon over the guacamole.
  • Fold the sides of the tortilla over the filling and roll them up tightly.
  • Serve immediately while still warm.

Notes

For a vegetarian version, omit the bacon and add more vegetables such as spinach or bell peppers.
