Equipment

  • 1 9-inch pie dish For assembling the pie
  • 1 Food processor For making the biscuit base
  • 1 Saucepan For preparing the toffee

Ingredients

  • 250 g Digestive biscuits Crushed into fine crumbs
  • 100 g Unsalted butter Melted
  • 1 can Sweetened condensed milk To make toffee
  • 3 Bananas Sliced
  • 300 ml Heavy cream Whipped to soft peaks
  • Grated chocolate to garnish

Instructions

  • Combine digestive biscuit crumbs with melted butter and press the mixture into the bottom of the pie dish. Chill in the refrigerator for at least 20 minutes.
  • Boil a can of sweetened condensed milk in a saucepan for three hours, making sure the can is completely covered with water. Let it cool to form toffee.
  • Spread the toffee over the chilled biscuit base.
  • Arrange sliced bananas over the toffee.
  • Cover with whipped cream and smooth the surface.
  • Garnish with grated chocolate and chill the pie for at least 1 hour before serving.

Notes

Ensure the can of sweetened condensed milk is always covered with water while boiling to prevent bursting. For a variation, try topping with a sprinkle of sea salt for a salted caramel effect.
