Equipment

  • 1 Non-stick pan For cooking the scrambled eggs
  • 1 Toaster For toasting the bread

Ingredients
  

  • 4 slices Bread Preferably sourdough or a sturdy crusty bread
  • 4 Eggs Beaten
  • 1 Avocado Sliced
  • 1 cup Cherry tomatoes Halved
  • 2 tbsp Olive oil For drizzling
  • to taste Salt and pepper
  • as needed Fresh basil leaves For garnish

Instructions
 

  • Toast the bread slices in a toaster until golden brown and crispy.
  • Heat a non-stick pan over medium heat and scramble the beaten eggs until just set. Season with salt and pepper to taste.
  • Top each toasted bread slice with scrambled eggs, then add avocado slices and cherry tomato halves.
  • Drizzle with olive oil, season with additional salt and pepper if desired, and garnish with fresh basil leaves.
  • Serve immediately and enjoy your Breakfast Bruschetta!

Notes

For added flavor, you can rub a clove of garlic on the toasted bread slices before adding the toppings.
