Equipment

  • 1 Soup pot
  • 1 Immersion blender For blending the soup

Ingredients
  

  • 1 medium Butter squash Peeled, seeded, and diced
  • 1 tbsp Butter
  • 1 onion Onion Chopped
  • 2 cloves Garlic Minced
  • 4 cups Vegetable broth
  • 1 cup Heavy cream
  • to taste Salt and pepper

Instructions
 

  • In a soup pot, melt butter over medium heat.
  • Add chopped onion and garlic, sauté until fragrant.
  • Add diced butter squash and cook for 5 minutes.
  • Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes until squash is tender.
  • Using an immersion blender, blend the soup until smooth.
  • Stir in heavy cream, season with salt and pepper to taste.
  • Serve hot and enjoy!

Notes

For a vegan version, replace butter with olive oil and heavy cream with coconut cream.
