Equipment

  • 1 Non-stick skillet For cooking the vegetables and eggs
  • 1 Saucepan For cooking the rice

Ingredients
  

  • 2 cups White rice Cooked
  • 4 Eggs Cooked to preference
  • 1 tbsp Olive oil
  • 1 cup Bell peppers Sliced
  • 1 cup Onions Sliced
  • 1 tbsp Cajun seasoning Adjust to taste
  • to taste Salt
  • to taste Black pepper

Instructions
 

  • Cook rice according to package instructions and set aside.
  • Heat olive oil in a non-stick skillet over medium heat.
  • Add sliced bell peppers and onions, and sauté until soft.
  • Stir in cajun seasoning, salt, and black pepper, and cook for another minute.
  • In the same skillet, cook eggs to your preference (fried or scrambled).
  • To serve, place a portion of rice in a bowl, top with the cajun vegetables and eggs.
  • Garnish with additional cajun seasoning or fresh herbs if desired.

Notes

For added flavor, try adding cooked sausage or chicken. Adjust the cajun seasoning according to spice preference.
