Follow this recipe to bake a deliciously moist carrot cake, filled with spices, nuts, and a hint of citrus, topped with a creamy frosting.

Equipment

  • 1 9x13 inch baking pan To hold the cake batter
  • 1 Mixing Bowl For mixing ingredients
  • 1 Hand mixer To blend the batter smoothly

Ingredients
  

  • 2 cups All-purpose flour Sifted
  • 2 tsp Baking soda
  • 1/2 tsp Salt
  • 1.5 tsp Ground cinnamon
  • 1.5 cups Granulated sugar
  • 3 units Large eggs Room temperature
  • 1 cup Vegetable oil
  • 2 tsp Vanilla extract
  • 2 cups Grated carrots Fresh
  • 1 cup Chopped walnuts Optional
  • 8 oz Cream cheese Softened
  • 1/2 cup Unsalted butter Softened
  • 4 cups Powdered sugar Sifted
  • 1 tsp Vanilla extract

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a mixing bowl, combine flour, baking soda, salt, and cinnamon.
  • In another bowl, whisk together sugar, eggs, oil, and vanilla extract until smooth.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the grated carrots and walnuts until evenly distributed.
  • Pour the batter into the prepared pan and spread evenly.
  • Bake for 40 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
  • In a mixing bowl, beat the cream cheese and butter together until smooth and creamy.
  • Gradually add the powdered sugar and beat until well combined.
  • Mix in the vanilla extract until fully incorporated.
  • Spread the frosting over the cooled cake.

Notes

For a nut-free version, omit the walnuts.
