Equipment

  • 1 Rolling Pin For rolling out the dough
  • 1 Skillet For frying the pancakes

Ingredients
  

  • 2 cups All-purpose flour
  • 1 cup Boiling water As needed
  • 4 tbsp Vegetable oil Divided
  • 1 bunch Scallions Finely chopped
  • to taste Salt

Instructions
 

  • In a bowl, combine flour and salt. Gradually add boiling water and mix until a dough forms.
  • Knead the dough for about 5 minutes until smooth. Cover and let it rest for 30 minutes.
  • Divide the dough into 4 pieces. Roll each piece into a thin circle.
  • Brush a thin layer of oil over the dough, sprinkle with scallions and a pinch of salt.
  • Roll the dough into a log, then coil it into a spiral. Flatten it into a pancake using a rolling pin.
  • Heat a skillet over medium heat, add 1 tbsp oil, and cook each pancake until golden brown on both sides.
  • Serve hot with dipping sauce.

Notes

For an extra crispy texture, press the pancakes gently with a spatula while frying.
