Equipment

  • 1 Mixing Bowl For mixing the filling ingredients
  • 1 Skillet For cooking the filling
  • 1 Steamer For cooking the dumplings

Ingredients
  

  • 4 large Eggs Beaten
  • 1 cup Chives Chopped
  • 1 tbsp Soy sauce
  • 1 tsp Sesame oil
  • to taste Salt
  • 30 pcs Dumpling wrappers Store-bought or homemade

Instructions
 

  • Heat sesame oil in a skillet over medium heat.
  • Add beaten eggs and gently scramble until just set.
  • Stir in the chopped chives and soy sauce, and cook for an additional 1-2 minutes. Season with salt.
  • Allow the filling to cool slightly before using.
  • Place a tablespoon of the filling in the center of a dumpling wrapper.
  • Fold the wrapper in half and pinch the edges to seal the dumpling.
  • Repeat with the remaining wrappers and filling.
  • Arrange the dumplings in a steamer basket lined with parchment paper.
  • Steam over boiling water for 10-12 minutes or until the wrappers are translucent.
  • Serve warm with your favorite dipping sauce.

Notes

For a more flavorful filling, add a pinch of white pepper and a teaspoon of finely minced ginger.
