Ingredients
  

  • 2 Hard-boiled eggs Peeled and chopped
  • 1 cup Cucumber Diced
  • 1 cup Cherry tomatoes Halved
  • 1 cup Bell pepper Diced (any color)
  • 1 cup Romaine lettuce Chopped
  • 1/4 cup Red onion Finely chopped
  • to taste Salt and pepper
  • 2 tbsp Olive oil
  • 1 tbsp Lemon juice Freshly squeezed
  • 1 tsp Dijon mustard
  • 1 tsp Honey
  • to taste Salt and pepper

Instructions
 

  • In a large bowl, combine the chopped eggs, cucumber, cherry tomatoes, bell pepper, romaine lettuce, and red onion.
  • Season with salt and pepper to taste.
  • In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, salt, and pepper until well combined.
  • Pour the dressing over the salad and toss gently to combine.
  • Serve immediately and enjoy your fresh Chopped Salad with Eggs.

Notes

Feel free to add other vegetables of your choice, like avocado or carrots, to customize this salad.
