Equipment

  • 1 Skillet For cooking the chorizo and eggs
  • 1 Baking sheet For assembling and baking the nachos

Ingredients
  

  • 1 bag Tortilla chips
  • 200 g Chorizo Casing removed and crumbled
  • 4 Eggs Lightly beaten
  • 1 cup Cheddar cheese Shredded
  • 1 cup Monterey Jack cheese Shredded
  • 1 medium Avocado Diced
  • 1/2 cup Fresh salsa
  • 1/4 cup Cilantro Chopped
  • to taste Salt and pepper

Instructions
 

  • Preheat oven to 375°F (190°C). In a skillet, cook the crumbled chorizo over medium heat until browned, approximately 5 minutes. Remove from skillet and set aside.
  • In the same skillet, add the beaten eggs seasoned with salt and pepper. Scramble over medium heat until just set. Remove from heat.
  • On a baking sheet, spread out a layer of tortilla chips. Evenly distribute the cooked chorizo and scrambled eggs over the chips.
  • Sprinkle both types of shredded cheese over the top of the chorizo and eggs.
  • Bake in the preheated oven until the cheese is melted and bubbly, about 5-7 minutes.
  • After baking, top the nachos with diced avocado, fresh salsa, and chopped cilantro.
  • Serve immediately while warm.

Notes

Customize your breakfast nachos by adding your favorite toppings like black beans, corn, jalapeños, or sour cream.
