Equipment

  • 1 Skillet For cooking chorizo and eggs
  • 1 Spatula For stirring and scrambling eggs

Ingredients
  

  • 250 g Chorizo sausage Casing removed and crumbled
  • 6 Eggs Beaten
  • 8 Tortillas Corn or flour
  • to taste Salt
  • to taste Black pepper
  • 1/4 cup Fresh cilantro Chopped
  • 1/4 cup Cheddar cheese Shredded
  • 1 Avocado Sliced
  • 1 Lime Cut into wedges

Instructions
 

  • Heat a skillet over medium heat and cook the crumbled chorizo until browned and cooked through, about 5-7 minutes.
  • Drain excess fat if necessary, then add beaten eggs to the skillet with the chorizo.
  • Season with salt and pepper, and gently scramble until eggs are fully cooked.
  • Warm the tortillas in a separate pan or microwave, then fill each tortilla with the chorizo and egg mixture.
  • Top with cilantro, cheese, avocado, and a squeeze of lime if desired.
  • Serve immediately and enjoy.

Notes

For a lighter option, use turkey chorizo and egg whites.
