Equipment

  • 1 Large skillet For cooking the hash
  • 1 Spatula For stirring

Ingredients
  

  • 250 g Chorizo sausage Sliced
  • 2 tbsp Olive oil
  • 3 cups Potatoes Cubed
  • 1 Onion Chopped
  • 4 Eggs
  • to taste Salt
  • to taste Black pepper Freshly ground
  • 2 tbsp Fresh parsley Chopped, for garnish

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add potatoes and cook until golden and crispy, about 10 minutes.
  • Add chorizo and onion, cooking until the onion is soft and the chorizo is browned.
  • Make four wells in the hash and crack an egg into each.
  • Cover and cook until eggs are set to your preference.
  • Season with salt and pepper.
  • Garnish with chopped parsley before serving.

Notes

For a lighter version, use turkey chorizo and serve with a side of avocado.
