Equipment

  • 1 Saucepan For cooking the dough
  • 1 Piping bag For shaping the pastry
  • 1 Baking sheet For baking the pastry

Ingredients
  

  • 1/2 cup Unsalted butter Cut into pieces
  • 1 cup Water
  • 1/4 tsp Salt
  • 1 cup All-purpose flour Sifted
  • 4 Large eggs At room temperature
  • 2 cups Pastry cream or whipped cream

Instructions
 

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a saucepan, bring the water, butter, and salt to a rolling boil.
  • Add the flour all at once and stir vigorously until the mixture forms a ball.
  • Remove from heat and let it cool for a few minutes.
  • Add the eggs one at a time, beating well after each addition until smooth and shiny.
  • Transfer the dough to a piping bag and pipe small rounds or oblong shapes onto the prepared baking sheet.
  • Bake for 15 minutes, then reduce the oven temperature to 375°F (190°C) and bake for an additional 20 minutes until golden brown and crisp.
  • Let the pastries cool completely on a wire rack before filling.
  • Once the pastries are cool, cut them in half and fill with pastry cream or whipped cream.
  • Serve immediately or refrigerate until ready to serve.

Notes

Ensure the oven is properly preheated for the choux pastry to rise well. You can also dip the tops in chocolate for chocolate eclairs.
