Equipment

  • 1 Skillet Preferably non-stick or cast iron

Ingredients
  

  • 2 cups Potatoes Diced into small pieces
  • 1 cup Onions Chopped
  • 4 Eggs
  • 1 cup Shredded cheese Your choice of cheese
  • 2 tbsp Olive oil
  • to taste Salt
  • to taste Pepper

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Add diced potatoes and cook until they start to get soft, about 10 minutes.
  • Add chopped onions to the skillet and cook until the onions are translucent and potatoes are golden brown, about 5 minutes.
  • Crack the eggs over the potato and onion mixture. Cover the skillet with a lid and cook until the eggs are set to your liking.
  • Sprinkle shredded cheese over the top, covering the eggs and vegetables. Cover again until the cheese melts.
  • Season with salt and pepper to taste.
  • Serve hot directly from the skillet.

Notes

For a spicier version, you can add chopped bell peppers or jalapeños along with the onions.
