Ingredients
  

  • 1 lb Chicken breast Boneless, skinless, diced
  • 4 cups Potatoes Peeled, cubed
  • 1 onion Onion Chopped
  • 3 cloves Garlic Minced
  • 4 cups Chicken broth Low sodium
  • 1 cup Heavy cream
  • 2 tbsp Butter
  • 2 tbsp Flour
  • to taste Salt and pepper

Instructions
 

  • In a large pot, melt butter and sauté onions and garlic until fragrant.
  • Add diced chicken and cook until browned.
  • Stir in flour to create a roux, then slowly add chicken broth while stirring.
  • Add potatoes, salt, and pepper. Let it simmer until potatoes are tender.
  • Stir in heavy cream and let soup simmer for an additional 5 minutes.
  • Adjust seasoning if needed and serve hot.

Notes

Feel free to add in extra vegetables like carrots or celery for added flavor and nutrition.
