Enjoy a flavorful twist on the classic sandwich with this curried egg and chicken salad, packed with spices and served on your choice of bread.

Equipment

  • 1 Mixing Bowl For combining the salad ingredients together
  • 1 Fork or whisk For mixing

Ingredients
  

  • 1 cup Cooked chicken breast Shredded or chopped
  • 4 Hard-boiled eggs Chopped
  • 1/3 cup Mayonnaise
  • 2 tbsp Plain yogurt For creaminess
  • 1 tbsp Curry powder Adjust to taste
  • 1 tsp Mustard Preferably Dijon
  • to taste Salt and pepper
  • 8 slices Bread Your choice
  • 1/4 cup Almonds Sliced, for crunch
  • 1/4 cup Raisins Optional, for sweetness

Instructions
 

  • In a large mixing bowl, combine the shredded chicken, chopped eggs, mayonnaise, yogurt, curry powder, mustard, salt, and pepper.
  • Mix thoroughly until all the ingredients are well coated with the dressing.
  • Taste and adjust the seasoning, adding more curry powder, salt, or pepper as needed.
  • Lay out the bread slices and divide the salad mixture evenly among half of them.
  • Sprinkle with sliced almonds and raisins if using.
  • Top with the remaining slices of bread, press down lightly, and serve.

Notes

For a lighter version, use low-fat mayonnaise and yogurt. You can also add additional vegetables like diced celery or apple for extra crunch and flavor.
