Ingredients
  

For the Chocolate Mousse

  • 8 ounces high-quality dark chocolate (70% cocoa), chopped
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • 4 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 tsp pure vanilla extract

Instructions
 

  • Melt the Chocolate:
    In a heatproof bowl set over simmering water (double boiler), melt the chopped dark chocolate, heavy cream, and butter together, stirring until smooth. Remove from heat and let it cool slightly.
  • Prepare the Egg Yolks:
    In a separate bowl, whisk the egg yolks and 2 tablespoons of granulated sugar until pale and creamy. Stir in the vanilla extract.
  • Combine the Mixtures:
    Gradually pour the slightly cooled chocolate mixture into the egg yolk mixture, whisking continuously to prevent the eggs from scrambling. Mix until well combined and smooth.
  • Whip the Egg Whites:
    In a clean, dry bowl, beat the egg whites with an electric mixer until soft peaks form. This usually takes about 2-3 minutes.
  • Fold the Egg Whites:
    Gently fold the whipped egg whites into the chocolate mixture. Be careful not to overmix; you want to maintain the mousse's airy texture.
  • Chill and Serve:
    Divide the chocolate mousse into serving glasses or ramekins.Cover and refrigerate for at least 2 hours, or until the mousse is set.
  • Garnish and Enjoy:
    Before serving, garnish with a dollop of whipped cream, shaved chocolate, and fresh berries or mint leaves, if desired.
