  • 1 Mixing Bowl For combining ingredients

Ingredients
  

  • 8 oz Rotini pasta
  • 1/2 cup Dill pickle juice
  • 1 cup Dill pickles Chopped
  • 1/2 cup Cheddar cheese Cubed
  • 1/4 cup Red onion Finely diced
  • 1/2 cup Mayonnaise
  • 1/4 cup Sour cream
  • 1 tbsp Dill weed Fresh or dried
  • 1 tbsp Dill pickle juice Additional
  • to taste Salt and pepper

Instructions
 

  • Cook the pasta according to package instructions, drain, and rinse under cold water.
  • Transfer pasta to a bowl, add the dill pickle juice, and toss to coat. Set aside.
  • In a large mixing bowl, combine the chopped pickles, cheese cubes, and diced onion.
  • Add the pasta to the pickle mixture and mix well.
  • In a small bowl, whisk together mayonnaise, sour cream, dill weed, and additional pickle juice.
  • Season with salt and pepper to taste.
  • Pour the dressing over the pasta and pickle mixture and stir until evenly coated.
  • Chill for at least 1 hour before serving to enhance the flavors.
  • Serve cold, garnished with extra dill weed if desired.

Notes

For a lighter version, use Greek yogurt in place of sour cream and low-fat mayonnaise.
