Dresdner Stollen Recipe

Follow this recipe to prepare a traditional Dresdner Stollen, a rich German fruit bread typically enjoyed during the Christmas season.

Equipment

  • 1 Mixing Bowl For mixing the dough
  • 1 Baking sheet Lined with parchment paper
  • 1 Oven Preheated to 175°C (350°F)

Ingredients
  

  • 500 g Flour All-purpose
  • 100 g Sugar
  • 250 ml Milk Warm
  • 42 g Fresh yeast
  • 200 g Butter Melted
  • 1 tsp Salt
  • 100 g Almonds Chopped
  • 200 g Mixed dried fruit Raisins, currants, candied citrus peel
  • 1 tsp Lemon zest Finely grated
  • 1 tsp Ground cardamom
  • 1 tsp Ground nutmeg
  • 200 g Marzipan Rolled into a log
  • 50 g Butter Melted
  • 100 g Powdered sugar

Instructions
 

  • In a large mixing bowl, combine flour, sugar, salt, lemon zest, ground cardamom, and ground nutmeg.
  • Dissolve the fresh yeast in warm milk. Add to the flour mixture and knead to form a dough.
  • Incorporate the melted butter into the dough and knead until smooth.
  • Add chopped almonds and mixed dried fruit. Mix well to evenly distribute.
  • Cover the dough and let it rise in a warm place for about 1 hour or until doubled in size.
  • Preheat the oven to 175°C (350°F).
  • Punch down the dough. On a floured surface, roll it out into a rectangle. Place the marzipan log in the center and fold the dough over it, sealing the edges.
  • Place the Stollen on a baking sheet lined with parchment paper and let it rise for another 30 minutes.
  • Bake in the preheated oven for 50-60 minutes, or until golden brown.
  • Remove from the oven and immediately brush with melted butter. Cool slightly, then generously dust with powdered sugar.
  • Allow the Stollen to cool completely before slicing and serving.

Notes

Stollen can be stored wrapped in aluminum foil and placed in an airtight container for several weeks, allowing the flavors to mature.
