Equipment

  • 1 Pie dish For baking the pie
  • 1 Frying pan For cooking the bacon and leeks

Ingredients
  

  • 6 slices Bacon Chopped
  • 2 large Leeks Sliced and cleaned
  • 5 large Eggs Beaten
  • 1/2 cup Milk
  • 1/2 cup Heavy cream
  • to taste Salt
  • to taste Black pepper
  • 1 cup Grated cheese Cheddar or Gruyere
  • 2 cups All-purpose flour
  • 1 cup Cold butter Cubed
  • 1/2 tsp Salt
  • 1/4 cup Cold water Adjust as needed

Instructions
 

  • In a bowl, mix flour and salt. Add cold butter and mix until crumbly.
  • Gradually add cold water, mixing until the dough comes together.
  • Roll out the dough and fit into a pie dish. Refrigerate while preparing the filling.
  • Preheat the oven to 375°F (190°C).
  • In a frying pan, cook the chopped bacon until crispy. Remove and set aside.
  • In the same pan, sauté the leeks until softened. Remove and set aside.
  • In a bowl, whisk together eggs, milk, cream, salt, and pepper.
  • Sprinkle bacon, leeks, and cheese over the prepared crust.
  • Pour the egg mixture over the filling.
  • Bake in the preheated oven for 35-40 minutes or until set and golden.
  • Let it cool slightly before serving.

Notes

For a lighter version, use half-and-half instead of cream and opt for turkey bacon.
