Equipment

  • 1 Oven For baking the sweet potatoes
  • 1 Skillet For cooking the bacon and eggs

Ingredients
  

  • 4 Medium sweet potatoes Washed
  • 8 slices Bacon Chopped
  • 4 Eggs
  • 1/2 cup Shredded cheese Your choice of cheese
  • to taste Salt and pepper
  • 2 tbsp Chives Finely chopped

Instructions
 

  • Preheat your oven to 400°F (200°C). Prick the sweet potatoes with a fork and bake for about 45-50 minutes or until tender.
  • While the sweet potatoes are baking, cook the bacon in a skillet until crispy. Remove and set aside.
  • In the same skillet, scramble the eggs and season with salt and pepper.
  • Once the sweet potatoes are done, let them cool slightly, then cut a slit on the top and scoop out some of the flesh to make room for the filling.
  • Stuff each sweet potato with the scrambled eggs, bacon, and top with shredded cheese.
  • Place the stuffed sweet potatoes back in the oven for about 5-10 minutes, or until the cheese is melted.
  • Garnish with chives before serving.

Notes

Customize the filling by adding your favorite ingredients like sautéed vegetables, different types of cheese, or herbs.
