  • 1 Frying pan For cooking the eggs
  • 1 Mixing bowl For preparing egg mixture

Ingredients
  

  • 2 Eggs Beaten
  • 1 tbsp Olive oil For cooking
  • 1 cup Black beans Cooked, drained, and rinsed
  • 2 Tortillas Medium-sized
  • 1/2 cup Cheddar cheese Shredded
  • 1 Avocado Sliced
  • to taste Salt and pepper

Instructions
 

  • Heat olive oil in a frying pan over medium heat.
  • Add beaten eggs and season with salt and pepper. Scramble the eggs until cooked through.
  • Warm the tortillas in a dry pan or microwave for a few seconds.
  • Place scrambled eggs, black beans, cheddar cheese, and avocado slices on each tortilla.
  • Roll up the tortillas tightly and serve immediately.

Notes

Feel free to add your favorite salsa or hot sauce for extra flavor.
