Equipment

  • 1 Non-stick skillet For cooking the eggs and chorizo
  • 1 Spatula For scrambling the eggs

Ingredients
  

  • 200 g Chorizo Crumbled or finely chopped
  • 6 large Eggs Beaten
  • 4 Flour tortillas Large
  • 1 cup Cheddar cheese Shredded
  • 1/4 cup Milk To mix with the eggs
  • to taste Salt and pepper
  • 2 tbsp Oil or butter For cooking
  • 1/2 cup Salsa
  • 1/2 cup Sour cream
  • 1/4 cup Cilantro Chopped

Instructions
 

  • In a skillet, heat oil or butter over medium heat. Add the chorizo and cook until it's browned and cooked through.
  • In a bowl, whisk the eggs with milk, salt, and pepper. Add the egg mixture to the skillet with the chorizo and scramble until the eggs are just set.
  • Warm the tortillas on a skillet or in the microwave.
  • Divide the egg and chorizo mixture evenly among the tortillas. Top with shredded cheese.
  • Add optional toppings like salsa, sour cream, and cilantro as desired.
  • Roll up the tortillas, folding in the sides to enclose the filling, and serve warm.

Notes

For a lighter version, substitute chorizo with turkey chorizo and use low-fat cheese.
