Ingredients
  

  • 3 Eggs Boiled and chopped
  • 2 cups Mashed potatoes Freshly prepared
  • 1 cup Breadcrumbs For coating
  • 1 tsp Salt
  • 1 tsp Black pepper Ground
  • 2 tbsp Chopped parsley
  • as needed Oil For frying

Instructions
 

  • In a mixing bowl, combine chopped eggs, mashed potatoes, salt, black pepper, and parsley.
  • Shape the mixture into small croquettes.
  • Coat each croquette with breadcrumbs.
  • Heat oil in a frying pan over medium heat.
  • Fry the croquettes until golden brown and crispy.
  • Drain on paper towels and serve warm.

Notes

For extra flavor, add a bit of grated cheese to the potato mixture.
