Equipment

  • 1 Non-stick pan For cooking the eggs and spinach
  • 1 Toaster For toasting the bread

Ingredients
  

  • 4 Eggs Beaten
  • 2 cups Fresh spinach Chopped
  • 1 cup Cheese Grated (cheddar or your choice)
  • 4 slices Bread Whole grain or your choice
  • 1 tbsp Butter
  • to taste Salt and pepper

Instructions
 

  • Heat butter in a non-stick pan over medium heat.
  • Add chopped spinach and cook until wilted.
  • Add beaten eggs to the pan and cook, stirring gently, until they are scrambled and fully cooked.
  • Season with salt and pepper to taste.
  • Toast the bread slices to your liking.
  • Assemble the sandwich: place a portion of scrambled eggs and spinach onto a slice of toasted bread, sprinkle with grated cheese, and top with another slice of toasted bread.
  • Repeat for the second sandwich.
  • Serve hot and enjoy!

Notes

Feel free to add additional toppings like avocado, tomato slices, or a dash of hot sauce for extra flavor.
