Instructions
Heat olive oil in a frying pan over medium heat.
Add minced garlic and sauté until fragrant.
Add spinach and cook until wilted, about 2-3 minutes.
Pour beaten eggs over the spinach and stir gently.
Season with salt and pepper, and cook until eggs are fully set.
Remove from heat and serve immediately.
Notes
For added flavor, sprinkle some grated cheese on top before serving.
