Equipment

  • 1 Panini press For grilling the sandwich
  • 1 Non-stick skillet For cooking the eggs

Ingredients
  

  • 4 slices Whole grain bread
  • 2 Eggs Lightly beaten
  • 1/4 cup Bell peppers Chopped
  • 1/4 cup Spinach Fresh, chopped
  • 1/4 cup Cheddar cheese Shredded
  • 2 tbsp Butter Softened
  • to taste Salt and pepper

Instructions
 

  • Heat a non-stick skillet over medium heat; add a little butter and scramble the eggs, seasoning with salt and pepper. Remove from heat and set aside.
  • Butter one side of each bread slice. Place the buttered side down and layer half of the slices with scrambled eggs, bell peppers, spinach, and cheddar cheese.
  • Top with the remaining bread slices, buttered side up, to form a sandwich.
  • Preheat a panini press and grill the sandwiches until the bread is golden brown and the cheese is melted, approximately 3-4 minutes.
  • Remove from the press, let cool slightly, and slice in half before serving.

Notes

You can add other vegetables like mushrooms or onions for additional flavor and nutrition.
