Equipment

  • 1 Skillet For cooking bacon and eggs
  • 1 Oven or toaster oven For warming the flatbread

Ingredients
  

  • 2 pieces Flatbread Store-bought or homemade
  • 4 slices Bacon
  • 2 Eggs Large
  • 1 Avocado Ripe, sliced
  • to taste Salt and pepper
  • to garnish Fresh herbs Such as cilantro or parsley

Instructions
 

  • Preheat oven or toaster oven to 350°F (175°C).
  • In a skillet, cook bacon over medium heat until crispy. Remove and place on paper towel to drain excess oil.
  • In the same skillet, fry eggs to your liking (sunny-side up or over easy). Season with salt and pepper.
  • Warm flatbreads in the oven for about 5 minutes.
  • Place warm flatbreads on plates, and layer with bacon, fried eggs, and slices of avocado.
  • Garnish with fresh herbs.
  • Serve immediately and enjoy!

Notes

For a vegetarian version, omit bacon and add more vegetables like roasted peppers or tomatoes.
