Equipment

  • 1 Non-stick pan For cooking the egg bhurji
  • 1 Toaster For toasting the bread

Ingredients
  

  • 4 Eggs Beaten
  • 1 tbsp Oil
  • 1 medium Onion Finely chopped
  • 1 medium Tomato Chopped
  • 1 small Green chili Finely chopped
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Red chili powder Adjust based on spice preference
  • 1/2 tsp Garam masala
  • to taste Salt
  • 2 tbsp Coriander leaves Chopped, for garnish
  • 4 slices Bread Preferably whole wheat or multigrain
  • as needed Butter For toasting

Instructions
 

  • Heat oil in a non-stick pan over medium heat. Add chopped onions and saute until translucent.
  • Add tomatoes and green chili. Cook until tomatoes are soft.
  • Add turmeric powder, red chili powder, garam masala, and salt. Stir well.
  • Pour in the beaten eggs and cook while scrambling, until eggs are fully cooked.
  • Garnish with coriander leaves and set aside.
  • Butter the bread slices and toast them in a toaster or on a pan until golden brown.
  • Place a generous amount of egg bhurji between two slices of toasted bread.
  • Serve hot with ketchup or chutney.

Notes

For a spicier version, add more green chilies or use spicy bread spreads.
