Ingredients
  

  • 4 Eggs Scrambled
  • 1 cup Black beans Cooked
  • 1 cup Quinoa Cooked
  • 1 Avocado Sliced
  • 1 Red bell pepper Diced
  • to taste Salt and pepper

Instructions
 

  • Heat a non-stick skillet over medium heat and scramble the eggs to your preference, seasoning with salt and pepper.
  • In a mixing bowl, combine cooked black beans, quinoa, and red bell pepper.
  • Divide the mixture between two bowls.
