Follow this recipe to prepare a delicious Egg Caprese Sandwich, a scrumptious fusion of the classic Caprese salad with the added richness of eggs, all in a convenient sandwich form.

Equipment

  • 1 Skillet For cooking the eggs
  • 1 Toaster For toasting the bread

Ingredients
  

  • 4 slices Bread Your choice of bread
  • 2 large Eggs
  • 4 slices Fresh mozzarella
  • 1 Tomato Sliced
  • 1 handful Fresh basil leaves
  • to taste Salt and pepper
  • 1 tbsp Olive oil
  • 1 tbsp Balsamic glaze Optional

Instructions
 

  • Heat the olive oil in a skillet over medium heat. Crack the eggs into the skillet and cook until the whites are set but yolks are still runny, or to your preference.
  • Toast the slices of bread until golden brown.
  • On one slice of bread, layer a slice of mozzarella, a few slices of tomato, a few basil leaves, and a cooked egg. Season with salt and pepper.
  • Repeat the layering process for the second sandwich.
  • Drizzle with balsamic glaze if using, then top with the second slice of bread.
  • Cut the sandwiches in half, and serve immediately.

Notes

For added flavor, consider adding a spread of pesto on the bread slices before assembling the sandwich.
