Follow this recipe to prepare a hearty Egg & Chickpea Stew, a wholesome dish made with boiled eggs and chickpeas simmered in a flavorful tomato sauce.

Equipment

  • 1 Large pot For cooking the stew
  • 1 Blender For pureeing the tomato sauce

Ingredients
  

  • 4 Eggs Hard-boiled
  • 1 can Chickpeas Drained and rinsed
  • 2 tbsp Olive oil
  • 1 cup Tomato sauce Freshly pureed
  • 1 tsp Ginger garlic paste
  • 1/2 tsp Cumin powder
  • 1/2 tsp Turmeric powder
  • to taste Salt and pepper

Instructions
 

  • Heat olive oil in a large pot, add ginger garlic paste, and sauté till aromatic.
  • Stir in cumin powder and turmeric powder, cook for a minute.
  • Add the tomato sauce and cook until the oil begins to separate.
  • Add chickpeas, salt, and pepper, stirring well to combine.
  • Pour in a cup of water and let it simmer for 15 minutes.
  • Add the boiled eggs, gently stir to coat with the sauce, and simmer for another 5 minutes.
  • Serve hot garnished with fresh cilantro or chopped parsley.

Notes

For added flavor, sprinkle some red pepper flakes before serving.
