Enjoy this simple and tasty Egg & Coleslaw Wrap, perfect for a quick lunch or a light dinner. This wrap combines the creaminess of coleslaw with the protein of eggs, all wrapped up in a soft tortilla.

Equipment

  • 1 Non-stick skillet For cooking the eggs
  • 1 Mixing bowl For preparing coleslaw

Ingredients
  

  • 4 Eggs Beaten
  • 1 cup Coleslaw mix Prepackaged or homemade
  • 2 tbsp Mayonnaise
  • 2 Tortillas Large size
  • to taste Salt and pepper
  • 1 tbsp Butter For frying

Instructions
 

  • In a mixing bowl, combine the coleslaw mix and mayonnaise. Season with salt and pepper.
  • Heat butter in a non-stick skillet over medium heat. Pour in the beaten eggs and scramble until fully cooked. Season with salt and pepper.
  • Warm the tortillas in a dry skillet for about 30 seconds on each side, or until pliable.
  • Place a portion of scrambled eggs in the center of each tortilla.
  • Top with a generous scoop of coleslaw mixture.
  • Fold the sides of the tortilla over the filling and roll it up tightly to form a wrap.

Notes

For a lighter version, use low-fat mayonnaise and whole wheat tortillas.
